VinificationA: We harvest by hand in the morning when the grapes reach a potential alcoholic content of 13 degrees, in order to preserve the freshness of the berries. The grapes are sent to a horizontal press where they are gently pressed to obtain a clear juice and avoid excessive tannins. Once the juice has been extracted from the press, vinification continues in the tank to develop the aromas and start fermentation at a temperature of approximately 13 degrees.
